        METHOD:
    
                  
                                                                                                                                                                                    
                              
        1. Cut avocado in half, remove stone and peel and slice avocado.
    
                  
                                                                                                                                                                                    
                              
        2. Peel and slice mango.
    
                  
                                                                                                                                                                                    
                              
        3. Shell and devein prawns.
    
                  
                                                                                                                                                                                    
                              
        4. Combine avocado, mango, and prawns in a large bowl.
    
                  
                                                                                                                                                                                    
                              
        5. Pour over combined French dressing, and lemon juice and season with pepper — stand for 10 minutes.
    
                  
                                                                                                                                                                                    
                              
        6. Combine mayonnaise and chilli sauce.
    
                  
                                                                                                                                                                                    
                              
        7. Drain dressing from prawn mixture into mayonnaise mixture and stir well.
    
                  
                                                                                                                                                                                    
                              
        8. Pour dressing over prawn and fruit mixture and refrigerate until ready to serve.
    
                  
                                                                                                                                                                                    
                              
        9. Serve with a fresh rocket salad mix and sprinkle with chopped chives.
